My roots are from town…from Sparti.
My mother used to knead all the time… We had our bread baked by neighbourhood’s bakery.
When i moved to the village we had our own ovens and i really liked it.
We were kneading our bread on boards. As long as it was ready, we put something heavy on it.
When i was young i was impressed because they covered the bread…the reason was to prevent it from making crust.
They were always making it with wheat from the mountain.
They used to put cheese in the tulum (leather bag), which it ramained there for three months and then when it was ready we used to eat it with some bread.
Bread or rusk with tulum cheese.
At Tsintzina we used to go to the fountains and we were taking cheese, olives, tomatoes and bread and we were eating altogether!
